dressing: one finely grated, three-inch piece of ginger
rice wine vinegar, half a cup
a serving of soy sauce
1 juiced lime
Sesame oil, two teaspoons
a half-cup of peanut butter
1 head of thinly sliced Napa cabbage
One red bell pepper, finely julienned
one yellow bell pepper, finely julienned.
2 minced serrano chilies, fine
1 big carrot, peeled and finely grated
Three green onions, sliced diagonally, with the entire white section and just half of the green
2 teaspoons of cilantro chiffonade
2 teaspoons of mint chiffonade
a half-teaspoon of black pepper, ground
1) Combine ginger, vinegar, soy sauce, lime juice, oil, and peanut butter in a small bowl or food processor.
2) Combine all other ingredients in a big bowl, then add dressing and stir. To make a complete dinner, you can add noodles and stir-fried pork to this dish and save some of the dressing for dressing.
